- 1 lb boneless and skinless chicken thighs or breasts
- 2 tablespoons fresh ginger, minced
- 1 stalk lemongrass, sliced
- 3 cloves garlic, minced
- 1 can (13.5 oz) coconut milk
- 4 cups chicken broth
- 2 cups fresh mushrooms (shiitake or button), sliced
- 2 tablespoons lime juice
- 1/4 cup fresh herbs (cilantro and Thai basil), chopped
- 2 red chili peppers (or chili paste for spice)
- 2 tablespoons fish sauce
- 1 tablespoon sugar
Instructions
- Prepare Your Ingredients: Mince garlic and ginger, slice lemongrass, and chop mushrooms.
- Sauté Aromatics: In a skillet, heat oil over medium heat. Add garlic, ginger, and lemongrass, and sauté for 2-3 minutes until fragrant.
- Brown the Chicken: Add chicken to the skillet and cook for about 5 minutes until golden brown.
- Add Broth and Coconut Milk: Pour in chicken broth and coconut milk, stirring well. Bring to a gentle simmer.
- Incorporate Mushrooms and Seasonings: Add mushrooms, fish sauce, sugar, and red chili peppers. Simmer for 10-15 minutes until chicken is cooked through.
- Finish with Freshness: Stir in lime juice and fresh herbs before serving.
- Serve Warm: Ladle soup into bowls and garnish as desired.
Notes
Adjust the spiciness by adding more or less chili. This soup can be made vegetarian by using tofu and vegetable broth.
