Description

A delightful dish of crispy eggplant layered with marinara sauce, mozzarella, and Parmesan cheese, perfect for family gatherings.


Ingredients

  • Medium-sized eggplants, sliced into ½-inch rounds
  • Salt, for drawing moisture
  • Olive oil, for sautéing
  • Fresh garlic, chopped finely
  • Your favorite marinara sauce
  • Fresh mozzarella cheese
  • Freshly grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Prepare the eggplant by sprinkling salt on both sides of the slices and letting them sit for 20-30 minutes to draw out moisture. Rinse and pat dry.
  2. In a skillet, heat olive oil over medium heat. Add eggplant slices and sauté until golden brown, about 4-5 minutes per side.
  3. In a baking dish, spread a thin layer of marinara sauce, then layer eggplant slices, followed by marinara, mozzarella, and Parmesan. Repeat until all ingredients are used, finishing with cheese on top.
  4. Preheat the oven to 375°F (190°C) and bake for 25-30 minutes until bubbly and golden. Broil for last 2-3 minutes for a crispy finish.
  5. Remove from oven, let cool slightly, and garnish with fresh basil before serving.

Notes

For a vegetarian twist, use vegan cheese. This dish pairs well with a fresh salad or garlic bread.
