Ingredients
- Medium-sized eggplants, sliced into ½-inch rounds
- Salt, for drawing moisture
- Olive oil, for sautéing
- Fresh garlic, chopped finely
- Your favorite marinara sauce
- Fresh mozzarella cheese
- Freshly grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Prepare the eggplant by sprinkling salt on both sides of the slices and letting them sit for 20-30 minutes to draw out moisture. Rinse and pat dry.
- In a skillet, heat olive oil over medium heat. Add eggplant slices and sauté until golden brown, about 4-5 minutes per side.
- In a baking dish, spread a thin layer of marinara sauce, then layer eggplant slices, followed by marinara, mozzarella, and Parmesan. Repeat until all ingredients are used, finishing with cheese on top.
- Preheat the oven to 375°F (190°C) and bake for 25-30 minutes until bubbly and golden. Broil for last 2-3 minutes for a crispy finish.
- Remove from oven, let cool slightly, and garnish with fresh basil before serving.
Notes
For a vegetarian twist, use vegan cheese. This dish pairs well with a fresh salad or garlic bread.
