Description

Ingredients

  • 1 cup espresso or strong brewed coffee
  • 8 oz dark chocolate (at least 70% cocoa)
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 3 large eggs
  • ½ cup unsalted butter, softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  2. Melt the dark chocolate using a double boiler and let it cool slightly.
  3. In a bowl, whisk together the flour, cocoa powder, baking powder, and baking soda.
  4. In a separate bowl, cream together the butter and sugar until light and fluffy, then add the eggs one at a time.
  5. Stir in the melted chocolate, espresso, and vanilla until combined.
  6. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for about 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar or drizzle with chocolate ganache before serving.
