- 1 cup espresso or strong brewed coffee
- 8 oz dark chocolate (at least 70% cocoa)
- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 3 large eggs
- ½ cup unsalted butter, softened
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
- Melt the dark chocolate using a double boiler and let it cool slightly.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and baking soda.
- In a separate bowl, cream together the butter and sugar until light and fluffy, then add the eggs one at a time.
- Stir in the melted chocolate, espresso, and vanilla until combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 30-35 minutes or until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or drizzle with chocolate ganache before serving.
Notes
For a vegan option, replace eggs with flax eggs and butter with coconut oil.
