Ingredients

- 4 cups kale, torn into bite-sized pieces
- 2 cups Brussels sprouts, shredded
- 2 oranges, segmented
- 1 grapefruit, segmented
- 1 cup pomegranate seeds
- 1/2 cup candied pecans (or nuts of choice)
- 1/3 cup olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Juice of 1 large orange
- Juice of 1/2 lemon
- Salt and pepper to taste
Instructions
- Prepare your ingredients by washing and drying the kale and Brussels sprouts. Tear the kale and shred the Brussels sprouts.
- Make the citrus vinaigrette by whisking together the orange juice, lemon juice, Dijon mustard, and honey in a mixing bowl. Gradually whisk in the olive oil until emulsified.
- Assemble the salad by combining the kale, shredded Brussels sprouts, citrus segments, pomegranate seeds, and nuts in a mixing bowl. Drizzle with the vinaigrette and toss to coat.
- Let the salad marinate for about 15 minutes before serving to enhance the flavors.
- Serve in a large bowl, garnished with extra pomegranate seeds, and enjoy!

Feel free to substitute ingredients based on availability or preference, such as using spinach for kale or using dried cranberries instead of pomegranate seeds.
