Ingredients

- 2 filet mignon steaks (1.5 to 2 inches thick)
- 2 cloves of fresh garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 4 tablespoons unsalted butter, softened
- 2 tablespoons olive oil
- Salt and freshly cracked black pepper, to taste
Instructions
- Bring filet mignon to room temperature and mince garlic and herbs.
- Season both sides of the steaks with salt and freshly cracked black pepper.
- Heat olive oil in a heavy skillet over medium-high heat. Sear the filet for 4-5 minutes on each side for medium-rare.
- Mix softened butter, minced garlic, and chopped herbs in a bowl; season with salt.
- Top seared filets with garlic herb butter and let rest for 5 minutes.
- Plate the filets and drizzle remaining melted garlic herb butter over the top to serve.
Notes
For best results, use a meat thermometer. Aim for 130°F (54°C) for medium-rare. Allow steaks to rest after cooking.
