Description

A deliciously rich and nutty dessert combining the indulgence of chocolate with the crunch of pistachios and tropical coconut.


Ingredients

  • 8 oz high-quality dark chocolate
  • 1/2 cup unsweetened cocoa powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup shelled and chopped pistachios
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup unsalted butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
  2. In a heatproof bowl over simmering water, melt the dark chocolate alongside the butter or coconut oil. Stir frequently until smooth and glossy.
  3. Remove the chocolate from heat and let it cool slightly. Whisk in the eggs and vanilla extract until smooth.
  4. In another bowl, mix together cocoa powder, sugar, and half of the chopped pistachios. Gradually fold this dry mixture into the chocolate mixture until blended.
  5. Gently fold coconut flakes and the remaining pistachios into the batter until evenly distributed.
  6. Pour the batter into your prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
  7. Allow the slice to cool in the pan for about ten minutes before transferring it to a wire rack to cool completely. Once cool, cut it into squares and serve.

Notes

For a richer flavor, let the slice rest overnight. Dusting with cocoa powder or powdered sugar before serving can enhance presentation.
