- 8 oz high-quality dark chocolate
- 1/2 cup unsweetened cocoa powder
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup shelled and chopped pistachios
- 1/2 cup unsweetened coconut flakes
- 1/2 cup unsalted butter or coconut oil
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
- In a heatproof bowl over simmering water, melt the dark chocolate alongside the butter or coconut oil. Stir frequently until smooth and glossy.
- Remove the chocolate from heat and let it cool slightly. Whisk in the eggs and vanilla extract until smooth.
- In another bowl, mix together cocoa powder, sugar, and half of the chopped pistachios. Gradually fold this dry mixture into the chocolate mixture until blended.
- Gently fold coconut flakes and the remaining pistachios into the batter until evenly distributed.
- Pour the batter into your prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
- Allow the slice to cool in the pan for about ten minutes before transferring it to a wire rack to cool completely. Once cool, cut it into squares and serve.
Notes
For a richer flavor, let the slice rest overnight. Dusting with cocoa powder or powdered sugar before serving can enhance presentation.
