- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter
- 1 tablespoon baking powder
- 1 pound chuck roast
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). In a mixing bowl, whisk together flour, baking powder, salt, and any desired herbs. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add milk until a soft dough forms.
- On a floured surface, gently knead the dough about 5-6 times before rolling it out to around 1-inch thickness. Use a biscuit cutter to cut out rounds and place them on a baking sheet.
- Bake the biscuits for about 15-20 minutes, or until beautifully golden.
- While the biscuits bake, season the beef with salt, pepper, and onion. Sear in a skillet until browned on all sides, then cover with beef broth and simmer until tender (about 2-3 hours). Shred the meat and return to the broth.
- Slice the baked biscuits in half, fill with the savory beef, and serve with warm au jus for dipping.
Notes
To ensure flaky biscuits, keep the butter cold and avoid overworking the dough. Brush with melted butter after baking for extra richness.
