Instructions
- In a mixing bowl, beat together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour and baking powder, then gradually add it to the wet mixture, mixing until combined into a dough.
- Divide the dough into two equal pieces. On a floured surface, roll one piece of dough into a rectangle, about ¼-inch thick.
- Spread your chosen filling evenly over the rolled dough, leaving a small border around the edges.
- Carefully roll up the dough, starting from one long edge to create a tight log. Wrap it in plastic wrap and chill in the refrigerator for at least an hour.
- Preheat your oven to 350°F (175°C). Once chilled, slice the log into ¼-inch rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, until the edges are golden.
- Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack.
