Description

Delightful cookies with colorful swirls and a buttery flavor, perfect for sharing and creating memories.

Ingredients

Scale
  • 1 cup softened, unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • Fillings: chocolate chips, peanut butter, fruit preserves, or crushed nuts

Instructions

  1. In a mixing bowl, beat together the softened butter and sugar until light and fluffy.
  2. Add the eggs, one at a time, followed by the vanilla extract.
  3. In another bowl, whisk together the flour and baking powder, then gradually add it to the wet mixture, mixing until combined into a dough.
  4. Divide the dough into two equal pieces. On a floured surface, roll one piece of dough into a rectangle, about ¼-inch thick.
  5. Spread your chosen filling evenly over the rolled dough, leaving a small border around the edges.
  6. Carefully roll up the dough, starting from one long edge to create a tight log. Wrap it in plastic wrap and chill in the refrigerator for at least an hour.
  7. Preheat your oven to 350°F (175°C). Once chilled, slice the log into ¼-inch rounds and place them on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, until the edges are golden.
  9. Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack.

Notes

For best results, ensure your ingredients are at room temperature and avoid overmixing the dough.
