- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- A pinch of nutmeg
- 3/4 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup unsulfured molasses
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, cloves, and nutmeg.
- In a separate bowl, beat the unsalted butter and brown sugar until light and fluffy.
- Add molasses and egg, mixing well to incorporate.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Chill the dough in the refrigerator for at least 30 minutes.
- Spoon tablespoon-sized amounts of dough, roll them into balls, and place on the baking sheets.
- Bake for 10-12 minutes until the edges are crispy and the tops are cracked.
- Allow to cool on the baking sheets before transferring to wire racks.
Notes
For best results, chill the dough before baking. Freshly ground spices enhance the flavor significantly.
