Description

Deliciously spiced Ginger Molasses Cookies with a chewy center and a crispy exterior, perfect for any occasion.


Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • A pinch of nutmeg
  • 3/4 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup unsulfured molasses
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, cloves, and nutmeg.
  3. In a separate bowl, beat the unsalted butter and brown sugar until light and fluffy.
  4. Add molasses and egg, mixing well to incorporate.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Spoon tablespoon-sized amounts of dough, roll them into balls, and place on the baking sheets.
  8. Bake for 10-12 minutes until the edges are crispy and the tops are cracked.
  9. Allow to cool on the baking sheets before transferring to wire racks.
