- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup molasses
- 1 tablespoon fresh ginger, grated
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup cream cheese, room temperature
- 2 eggs
- 1/2 cup vegetable oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and dust with flour.
- In a bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, and nutmeg.
- In another bowl, blend brown sugar and oil until fluffy, then beat in the eggs.
- Stir in molasses and the dry ingredient mixture, being careful not to overmix.
- In a separate bowl, beat cream cheese until smooth.
- Pour half the batter into the loaf pan, dollop cream cheese on top, and then add the remaining batter, swirling gently.
- Bake for 50-60 minutes until a toothpick comes out clean, then cool in the pan for 15 minutes before transferring to a wire rack.
- Slice and serve with butter or enjoy plain.
