Description

A warm and delightful Ginger Molasses Cream Cheese Swirl Loaf that combines rich flavors of ginger and molasses with a creamy swirl of cream cheese.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup cream cheese, room temperature
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and dust with flour.
  3. In a bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, and nutmeg.
  4. In another bowl, blend brown sugar and oil until fluffy, then beat in the eggs.
  5. Stir in molasses and the dry ingredient mixture, being careful not to overmix.
  6. In a separate bowl, beat cream cheese until smooth.
  7. Pour half the batter into the loaf pan, dollop cream cheese on top, and then add the remaining batter, swirling gently.
  8. Bake for 50-60 minutes until a toothpick comes out clean, then cool in the pan for 15 minutes before transferring to a wire rack.
  9. Slice and serve with butter or enjoy plain.
