Description

Ingredients

  • 1 tsp ground ginger
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsulfured molasses
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup softened cream cheese
  • 1 tbsp sugar (for cream cheese mixture)
  • 1 tsp vanilla extract (for cream cheese mixture)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and nutmeg.
  3. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, blending well after each addition, then mix in molasses until smooth.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing gently.
  6. In a separate bowl, mix softened cream cheese with sugar and vanilla.
  7. Pour half of the batter into the prepared pan, add dollops of cream cheese mixture, then top with remaining batter. Swirl with a knife.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
