- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon cinnamon
- ½ teaspoon cloves
- Pinch of salt
- ¾ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 egg
- ¼ cup molasses
- 8 oz cream cheese, softened
- ½ teaspoon vanilla extract
- 1–2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, ground ginger, cinnamon, cloves, and salt.
- In a separate bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and molasses to the butter mixture and mix until combined.
- Gradually add the dry mixture to the wet ingredients, stirring until a soft dough forms.
- Scoop the dough and roll it into balls, spacing them 2 inches apart on the baking sheet.
- Bake for 8-10 minutes or until the edges are firm but the centers look slightly underbaked.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Prepare the frosting by beating cream cheese, vanilla extract, and powdered sugar until smooth and fluffy.
- Spread cream cheese frosting between two cookies to create a sandwich.
- Allow to set before serving and enjoy!
Notes
Cookies can be stored in an airtight container for up to a week. Freeze baked cookies or unbaked dough for longer storage.
