Description

Deliciously soft and chewy ginger molasses cookies filled with a luscious cream cheese frosting, perfect for holiday gatherings or cozy evenings.


Ingredients

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon cinnamon
  • ½ teaspoon cloves
  • Pinch of salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 egg
  • ¼ cup molasses
  • 8 oz cream cheese, softened
  • ½ teaspoon vanilla extract
  • 12 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and molasses to the butter mixture and mix until combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring until a soft dough forms.
  6. Scoop the dough and roll it into balls, spacing them 2 inches apart on the baking sheet.
  7. Bake for 8-10 minutes or until the edges are firm but the centers look slightly underbaked.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Prepare the frosting by beating cream cheese, vanilla extract, and powdered sugar until smooth and fluffy.
  10. Spread cream cheese frosting between two cookies to create a sandwich.
  11. Allow to set before serving and enjoy!

Cookies can be stored in an airtight container for up to a week. Freeze baked cookies or unbaked dough for longer storage.
