Ingredients

- 1 whole sea bream (or substitute with snapper or trout)
- 2 tablespoons high-quality extra virgin olive oil
- 4 cloves fresh garlic, minced
- 2 fresh lemons, zested and juiced
- Fresh parsley, chopped
- Fresh oregano, chopped (or substitute with thyme or dill)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Drizzle olive oil on the bottom of a baking dish.
- Rinse the sea bream and pat dry. Score the fish on both sides.
- In a bowl, combine minced garlic, lemon juice, zest, salt, pepper, and half the olive oil. Pour over the fish and marinate for at least 30 minutes.
- Stuff the cavity of the fish with lemon slices and herbs.
- Place fish in the baking dish, drizzle with remaining olive oil, and roast for 20-25 minutes until flaky.
- Serve immediately, garnished with fresh herbs and extra lemon wedges.
