- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Green food coloring
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 2 tablespoons granulated sugar (for crust)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner to form a crust.
- Beat cream cheese and sugar until smooth, then add vanilla and eggs one at a time, mixing well after each addition. Add green food coloring to reach desired hue.
- Spoon cheesecake filling into the crusts, filling each about 3/4 full.
- Bake for 18-20 minutes or until edges are set but centers jiggle slightly. Cool in oven for 30 minutes.
- Chill cheesecakes in the refrigerator for at least two hours or until set.
- Top with whipped cream and holiday sprinkles or berry sauce before serving.
