Description

Ingredients

  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Green food coloring
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • Whipped cream (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner to form a crust.
  3. Beat cream cheese and sugar until smooth, then add vanilla and eggs one at a time, mixing well after each addition. Add green food coloring to reach desired hue.
  4. Spoon cheesecake filling into the crusts, filling each about 3/4 full.
  5. Bake for 18-20 minutes or until edges are set but centers jiggle slightly. Cool in oven for 30 minutes.
  6. Chill cheesecakes in the refrigerator for at least two hours or until set.
  7. Top with whipped cream and holiday sprinkles or berry sauce before serving.
