Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 cup orzo pasta
  • 1 can (14.5 oz) diced tomatoes (or crushed tomatoes)
  • 1 cup heavy cream (or half-and-half for lighter fare)
  • 1 medium onion, chopped
  • 23 cloves garlic, minced (or 1 teaspoon dried garlic)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add olive oil. Sauté chopped onions until translucent, about 3-4 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add the ground beef, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Season with salt and pepper.
  4. Pour in the diced tomatoes (with juices) and stir, allowing flavors to combine for 3-4 minutes.
  5. Stir in the orzo, blending with the beef and tomato mixture.
  6. Pour in the heavy cream. Lower heat to medium-low and cook for 15-20 minutes, stirring occasionally, until orzo is tender and has absorbed most of the liquid.
  7. Taste and adjust salt and pepper as necessary.
  8. Finish with fresh herbs, serve warm, and enjoy!

Notes

For added heat, include a pinch of red pepper flakes. If the sauce thickens too much, add a splash of water or broth to loosen it up.
