- 1 lb ground turkey
- 4 bell peppers (red, green, yellow, or orange)
- 1 cup cooked rice or quinoa
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheese (mozzarella or cheddar)
- Fresh herbs (parsley or basil)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and scoop out the seeds. Lightly oil them and set aside in a baking dish.
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, then add the minced garlic and cook until fragrant.
- Add the ground turkey to the skillet and cook until browned. Season with salt, pepper, and your choice of spices.
- In a large bowl, combine the cooked turkey mixture, cooked rice or quinoa, tomato sauce, herbs, and half of the cheese. Mix until well combined.
- Stuff each bell pepper with the turkey mixture and top with the remaining cheese.
- Cover with foil and bake for about 30 minutes. Remove foil for the last 10-15 minutes until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For softer peppers, par-boil them in salted water for 5 minutes before stuffing. You can substitute ground turkey with lean ground beef or chicken.
