Description

A nostalgic dish of bell peppers stuffed with a savory mixture of ground turkey, spices, and vegetables, baked to perfection.


Ingredients

  • 1 lb lean ground turkey
  • 4 bell peppers (red, yellow, green, or orange)
  • 1 cup cooked rice or quinoa
  • 1 cup diced tomatoes (canned or fresh)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 pinch chili powder
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté chopped onions and minced garlic until translucent. Add ground turkey and cook until browned.
  4. Stir in cooked rice, diced tomatoes, herbs, and spices until well combined.
  5. Stuff the turkey mixture into each bell pepper.
  6. Place the stuffed peppers in a baking dish, add water or broth to keep them moist, cover with foil, and bake for about 30 minutes. Remove foil and bake for an additional 10-15 minutes.
  7. Let cool briefly, garnish with herbs, and serve.

Notes

For a vegetarian option, replace ground turkey with mushrooms, lentils, or black beans. These peppers can also be frozen before baking.
