- 1 lb lean ground turkey
- 4 bell peppers (red, yellow, green, or orange)
- 1 cup cooked rice or quinoa
- 1 cup diced tomatoes (canned or fresh)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp oregano
- 1 tsp thyme
- 1 pinch chili powder
- 1/2 cup shredded cheese (optional)
- Fresh parsley or basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, sauté chopped onions and minced garlic until translucent. Add ground turkey and cook until browned.
- Stir in cooked rice, diced tomatoes, herbs, and spices until well combined.
- Stuff the turkey mixture into each bell pepper.
- Place the stuffed peppers in a baking dish, add water or broth to keep them moist, cover with foil, and bake for about 30 minutes. Remove foil and bake for an additional 10-15 minutes.
- Let cool briefly, garnish with herbs, and serve.
Notes
For a vegetarian option, replace ground turkey with mushrooms, lentils, or black beans. These peppers can also be frozen before baking.
