- 2 lbs beef tips (chuck or round)
- 8 oz fresh button or cremini mushrooms, sliced
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp Worcestershire sauce
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- 1 cup heavy cream or sour cream
- Salt and pepper, to taste
- 1 tsp paprika
Instructions
- Cut the beef into bite-sized pieces and pat dry. Season generously with salt and pepper.
- Heat a tablespoon of oil in a heavy skillet over medium-high heat. Sear the beef tips until browned on all sides, in batches if necessary.
- Add more oil if needed and sauté the onions and mushrooms until onions are translucent. Stir in minced garlic and sauté for one more minute.
- Deglaze the pan with a splash of beef broth, scraping up brown bits. Transfer beef and sautéed mixture to the Crock Pot.
- Add remaining beef broth, Worcestershire sauce, thyme, and rosemary. Stir to combine.
- Slow cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is tender.
- About 30 minutes before serving, stir in heavy cream or sour cream. Adjust seasonings as desired.
- Serve with mashed potatoes, rice, or buttered noodles and garnish with fresh parsley.
Notes
This dish freezes well; allow to cool before transferring to a freezer-safe container. Thaw overnight before reheating.
