- 2 zucchini, diced
- 1 bell pepper, diced
- 2 carrots, diced
- 1 cup corn
- 1 can diced tomatoes
- 4 cups vegetable broth (or chicken broth)
- 1 tsp cumin
- 2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions and minced garlic, and cook until translucent.
- Toss in diced carrots, zucchini, and bell peppers, sauté for 5-7 minutes.
- Sprinkle in spices and stir until fragrant.
- Pour in canned tomatoes, drained beans, and broth; stir well.
- Bring to a gentle boil, then reduce heat and simmer for 20-30 minutes.
- Taste and adjust seasonings, adding fresh herbs if desired.
- Ladle into bowls and serve warm.
