- 1 pound fresh carrots, peeled and cut into 2-inch pieces
- 2–3 tablespoons honey
- 2 tablespoons olive oil
- 2 teaspoons fresh thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then cut them into uniform pieces.
- In a large bowl, combine the cut carrots, honey, olive oil, fresh thyme, salt, and pepper. Toss until well coated.
- Spread the carrots in a single layer on a parchment-lined baking sheet.
- Roast for about 25-30 minutes, stirring halfway through.
- Check for doneness with a fork; they should be tender and caramelized.
- Garnish with remaining fresh thyme before serving.
Notes
For an extra zing, squeeze a bit of lemon juice over the top before serving.
