- 2 Honeycrisp apples, cored and thinly sliced
- 1 cup feta cheese, crumbled
- 4 cups mixed greens (arugula or spinach)
- 1 small red onion, thinly sliced
- 1/2 cup walnuts or pecans (optional)
- 2 tablespoons honey
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Wash the Honeycrisp apples, core, and slice them thinly, leaving the skins on.
- In a large salad bowl, add a generous handful of mixed greens.
- Thinly slice the red onion and sprinkle it over the greens.
- Crumble the feta cheese on top of the greens.
- Gently fold in the apple slices.
- In a separate bowl, whisk together olive oil, honey, lemon juice, salt, and pepper until emulsified.
- Drizzle the dressing over the salad just before serving, gently toss to combine, and enjoy!
Notes
