Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup whole milk
- 2 large eggs
- 1/2 cup melted butter
- 1/4 cup fresh orange juice
- 1 tbsp orange zest
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the muffin tin by lining with paper liners or greasing.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs with the milk and melted butter. Add the orange juice and zest and mix.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently add in the blueberries.
- Spoon the mixture into muffin cups, filling about 2/3 full.
- Bake for 20–25 minutes or until golden and a toothpick comes out clean.
- Let them cool slightly before transferring to a wire rack.
Notes
For extra crunch, sprinkle coarse sugar on top before baking. Avoid overmixing to keep muffins light and fluffy.
