- 1 lb boneless chicken (breast or thighs), cut into bite-sized pieces
- 1 cup sour cream or Greek yogurt
- 2 cloves garlic, minced
- 1 onion, diced
- 8 oz mushrooms, sliced
- 1 cup mixed vegetables (bell peppers, spinach, or broccoli)
- 1 tsp fresh thyme (or 1/3 tsp dried thyme)
- 1 cup cheese (Cheddar or Mozzarella), shredded
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Season the chicken with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 3-4 minutes).
- Add chicken to the skillet and cook until no longer pink (about 5-7 minutes).
- Incorporate mushrooms and any other vegetables, sautéing until softened (about 5 minutes).
- Reduce heat and stir in sour cream or Greek yogurt along with herbs until combined.
- Transfer the mixture to a greased 9×13 inch baking dish and sprinkle with cheese.
- Bake for 25-30 minutes, until bubbly and golden brown.
- Let it rest for 5 minutes before serving.
- Garnish with fresh herbs and enjoy!
Notes
This casserole can be customized with seasonal vegetables. For a crunchier top, consider adding crushed pork rinds or almond flour before baking.
