- 1 pie crust (store-bought or homemade)
- 1 cup pumpkin puree
- 1/2 cup brown sugar (or granulated sugar)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
- Optional: chocolate chips or chopped pecans
Instructions
- Prepare the Pie Crust: If making from scratch, mix flour, butter, and a pinch of salt until crumbly. Add cold water until the dough forms, wrap in plastic, and refrigerate for at least 30 minutes.
- Make the Filling: In a bowl, combine pumpkin puree, sugar, spices, and a dash of vanilla until smooth.
- Roll Out the Dough: Roll out chilled dough to about 1/8 inch thick. Use a round cutter for circles.
- Assemble the Pies: Place a circle on a baking sheet, add 1 tbsp filling, and cover with another circle. Seal edges with a fork and carve faces.
- Apply the Egg Wash: Brush tops with egg wash.
- Bake: Preheat oven to 375°F (190°C) and bake for 20-25 minutes until golden brown. Let cool.
- Serve with Love: Enjoy warm, optionally with vanilla ice cream.

Keep the dough chilled to prevent shrinking while baking. Avoid overfilling and always seal edges tightly.
