Description

A comforting bowl of Japanese Curry Ramen with deliciously chewy noodles and a rich, savory curry broth, perfect for sharing with family and friends.

Ingredients

  • Fresh ramen noodles
  • Japanese curry roux
  • Chicken or vegetable broth
  • Protein (chicken, beef, or tofu)
  • Carrots
  • Bell peppers
  • Mushrooms
  • Fresh ginger
  • Minced garlic
  • Onions
  • Green onions (for topping)
  • Nori (for topping)
  • Sesame seeds (for topping)
  • Soft-boiled eggs (for topping)

Instructions

  1. Chop your choice of vegetables and protein into bite-sized pieces.
  2. In a large pot, heat a splash of oil over medium heat. Add minced garlic and ginger; sauté until fragrant, about 1-2 minutes.
  3. Add the protein and cook until browned and almost done.
  4. Stir in the vegetables, cooking until they start to soften, about 4-5 minutes.
  5. Pour in the broth and bring to a gentle simmer. Stir in the curry roux until dissolved.
  6. Add the ramen noodles and cook according to package instructions until just tender.
  7. Ladle the ramen into bowls and top with green onions, nori, and any other desired toppings.

Notes

Add the noodles right before serving to keep them from becoming mushy. Adjust spices and seasoning to your taste for the most delicious results.
