Description

A delightful dish combining rich butter, spicy kimchi, and silky udon noodles, topped with a soft-boiled egg.


Ingredients

  • 200g Udon noodles (fresh or dried)
  • 2 tbsp unsalted butter
  • 100g medium-spiced kimchi
  • 2 eggs (soft-boiled or poached)
  • 2 cloves garlic (minced)
  • 2 green onions (chopped)
  • 1 tsp sesame oil
  • 2 tbsp soy sauce

Instructions

  1. Prepare the Soft-Boiled Eggs: Bring a small pot of water to a gentle boil. Carefully place the eggs in and boil for 6-7 minutes. Transfer to an ice bath immediately.
  2. Cook the Udon Noodles: In a separate pot, cook the udon noodles according to package instructions (about 5-8 minutes). Drain and set aside, reserving some cooking water.
  3. Make the Sauce: In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant (30 seconds to 1 minute). Add kimchi and sauté until warmed through.
  4. Combine: Toss cooked udon noodles into the skillet with a splash of reserved noodle water, soy sauce, and sesame oil until well coated.
  5. Serve: Plate the udon noodles, slice the soft-boiled eggs in half, and place them on top. Garnish with chopped green onions and sprinkle with sesame seeds if desired.

Notes

Feel free to substitute udon for soba or rice noodles. Adjust kimchi spiciness to taste and add any available vegetables for extra nutrients.
