- 4 tilapia fillets
- 3 cloves fresh garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- 200g green beans, trimmed
- Salt and pepper to taste
- Fresh herbs (optional), such as parsley or dill
Instructions
- Rinse the tilapia fillets under cold water and pat them dry. Trim the green beans by snapping off the ends. Mince the garlic.
- In a small bowl, combine olive oil, lemon juice, and garlic. Place the tilapia in a shallow dish and pour the mixture over them, coating them well. Season with salt and pepper.
- Heat a skillet over medium-high heat. Add a splash of olive oil and toss in the green beans, sautéing for about 3-4 minutes until vibrant and tender. Remove and set aside.
- In the same skillet on medium heat, add more oil if needed and cook the tilapia for 4-5 minutes per side until the fish flakes easily with a fork.
- Return the green beans to the skillet to warm through, then serve hot garnished with lemon zest and fresh herbs if desired.
Notes
Variations include adding cherry tomatoes or substituting with other vegetables. Ensure not to overcrowd the pan while cooking the fish for even cooking.
