Ingredients

- 1/2 cup nut butter (almond or peanut butter)

- 1 fresh lemon (zested and juiced)

Instructions
- Line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, nut butter, and sweetener. Stir until well-blended.
- Add lemon zest and juice, and vanilla extract to the mixture.
- Mix thoroughly until the oats are coated.
- Scoop portions onto the baking sheet and flatten them slightly.
- Refrigerate for about 30 minutes to firm up.

Notes
Make them a day in advance for deeper flavors. Store in an airtight container in the fridge for up to a week, or freeze for up to three months.
