A delightful dessert featuring a creamy cheesecake base infused with the sweet flavor of ripe mangoes, all atop a buttery graham cracker crust.

- 2 ripe mangoes, pureed
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 large eggs
- 2 tbsp fresh lemon juice
Instructions
- Prepare the crust by combining graham cracker crumbs and melted butter until wet sand consistency. Press into a lined baking dish and bake at 350°F for 10 minutes. Let cool.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Blend in mango puree and lemon juice until combined.
- Pour filling over cooled crust and bake at 325°F for 30-35 minutes until edges are set with a slight jiggle in the center.
- Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight to set.
- Slice into bars and serve chilled, optionally garnish with fresh mango or lime zest.
Notes
For best results, use room temperature ingredients and avoid overmixing. Chill bars overnight for the best texture.
