Description

A delightful dessert that combines rich creaminess with the vibrant sweetness of ripe mangoes, perfect for summer gatherings.


Ingredients

  • 2 ripe mangos, pureed
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tablespoon lime juice
  • 1 ½ cups crushed graham crackers
  • ⅓ cup granulated sugar (for crust)
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8×8 inch baking pan.
  2. In a bowl, mix the crushed graham crackers, ⅓ cup of sugar, and melted butter until crumbly. Press into the bottom of the pan and bake for 10 minutes until golden. Set aside to cool.
  3. In another bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar, then the eggs one at a time. Stir in lime juice and mango puree until smooth.
  4. Pour the mixture over the cooled crust. Bake for 25-30 minutes until set but slightly jiggly in the center. Let cool at room temperature, then refrigerate for at least four hours.
  5. Lift the bars from the pan using parchment paper, slice, and serve chilled, garnished with fresh mango slices or mint leaves if desired.

Ensure cream cheese is at room temperature for a smoother mixture. Avoid overmixing the eggs to prevent cracks.
