- 2 ripe mangos, pureed
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 2 eggs
- 1 tablespoon lime juice
- 1 ½ cups crushed graham crackers
- ⅓ cup granulated sugar (for crust)
- ½ cup melted butter
Instructions
- Preheat your oven to 325°F (160°C) and grease an 8×8 inch baking pan.
- In a bowl, mix the crushed graham crackers, ⅓ cup of sugar, and melted butter until crumbly. Press into the bottom of the pan and bake for 10 minutes until golden. Set aside to cool.
- In another bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar, then the eggs one at a time. Stir in lime juice and mango puree until smooth.
- Pour the mixture over the cooled crust. Bake for 25-30 minutes until set but slightly jiggly in the center. Let cool at room temperature, then refrigerate for at least four hours.
- Lift the bars from the pan using parchment paper, slice, and serve chilled, garnished with fresh mango slices or mint leaves if desired.
