Ingredients

- 8 ounces cheese (feta, mozzarella, or smoked gouda)
- ½ cup extra virgin olive oil
- 2–3 cloves fresh garlic, minced
- Handful of fresh herbs (basil, thyme, or oregano)
- 1–2 tablespoons vinegar (balsamic, red wine, or apple cider)
- Salt and pepper to taste
- Optional extras (sun-dried tomatoes, olives, red pepper flakes)
Instructions
- Cube the cheese into bite-sized pieces.
- In a bowl, whisk together the olive oil, minced garlic, chopped herbs, vinegar, salt, and pepper.
- Add any optional extras and mix well.
- Place the cubed cheese in a jar or shallow dish, and pour the marinade over it, ensuring it’s completely covered.
- Seal the jar or cover the dish and marinate in the fridge for at least 4 hours, or overnight for best results.
- Bring to room temperature before serving. Pair with crusty bread or fresh veggies.
Notes
Be careful not to over-marinate; a maximum of 24 hours is ideal. Use high-quality ingredients for the best flavor.
