- 1 cup heavy cream
- 1/2 cup coconut milk (or additional heavy cream)
- 2 tablespoons matcha powder
- 1 tablespoon gelatin
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the gelatin: Sprinkle the gelatin over cold water in a small bowl. Let it sit for about 5 minutes until it blooms.
- Combine the cream and coconut milk: In a saucepan, mix together the heavy cream, coconut milk, sugar, and vanilla extract. Heat gently over medium heat until the mixture is warm but not boiling.
- Dissolve the gelatin: Remove the saucepan from heat and add the bloomed gelatin, whisking until completely dissolved.
- Whisk in the matcha: Sift the matcha powder into the warm cream mixture and whisk until smooth.
- Pour into molds: Carefully pour the mixture into molds or serving cups. Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 4 hours until set.
- Serve and enjoy: Run a knife around the edges and invert onto a plate if desired, or serve in the cups. Top with crushed pistachios or fresh berries.
Notes
For a tropical twist, use coconut milk instead of heavy cream. Ensure to use high-quality matcha for the best flavor.
