- Boneless chicken (breast or thighs)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 cup Greek yogurt
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red onion, thinly sliced
- Feta cheese (optional)
- Fresh herbs (dill and parsley)
Instructions
- Marinate the chicken in olive oil, garlic, lemon juice, salt, pepper, and herbs for at least 30 minutes.
- Prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper; mix and refrigerate.
- Cook the marinated chicken on a grill or skillet for 6-7 minutes on each side until cooked through.
- Assemble the bowls with greens or rice, sliced chicken, cucumber, tomatoes, onion, and tzatziki. Top with feta if desired.
- Garnish with fresh herbs and drizzle with olive oil.
