Description

Ingredients

  • 2 cups fresh blueberries (or frozen)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  5. Gradually add the dry mixture into the wet ingredients, alternating with milk, beginning and ending with dry ingredients.
  6. Gently fold in blueberries.
  7. Grease and flour a 9-inch round cake pan or line it with parchment paper.
  8. Pour batter into the prepared pan and smooth out the top.
  9. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Check the cake a few minutes earlier than the recommended time, and avoid overmixing the batter to ensure a fluffy texture.
