- 2 cups fresh blueberries (or frozen)
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup whole milk
- 2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter and sugar until light and fluffy (3-5 minutes).
- Add eggs one at a time, mixing well after each addition, then add vanilla extract.
- Gradually add the dry mixture into the wet ingredients, alternating with milk, beginning and ending with dry ingredients.
- Gently fold in blueberries.
- Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Pour batter into the prepared pan and smooth out the top.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Check the cake a few minutes earlier than the recommended time, and avoid overmixing the batter to ensure a fluffy texture.
