- 1 cup brown sugar
- 1/2 cup unsulfured molasses
- 1 large egg
- granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Cream the butter and brown sugar together in a large mixing bowl until light and fluffy (about 3-5 minutes).
- Add the molasses and egg, mixing until well combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined, taking care not to overmix.
- Shape the dough into balls about 1 inch in diameter, and roll each ball in granulated sugar.
- Place the cookie balls on the baking sheets, spaced 2 inches apart, and bake for 10-12 minutes, until the edges are set but the centers are still soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
