- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 2 teaspoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
- Juice of 1/2 lemon
Instructions
- Prepare your ingredients: Chop the chicken into bite-sized pieces, slice the mushrooms, and mince the garlic.
- In a large skillet, melt butter over medium heat and add the chicken, seasoning it with salt and pepper. Cook until browned on all sides.
- Add garlic and mushrooms, stirring until the mushrooms are tender and golden.
- Add orzo to the pan and toast it lightly for one minute.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the orzo absorbs the broth and becomes al dente.
- Stir in lemon juice and fresh herbs during the final minute of cooking.
- Serve in bowls topped with extra herbs and grated Parmesan.
Notes
For added richness, stir in a splash of cream at the end. Feel free to add your favorite veggies, like spinach, for a nutritional boost.
