Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste
  • Juice of 1/2 lemon

Instructions

  1. Prepare your ingredients: Chop the chicken into bite-sized pieces, slice the mushrooms, and mince the garlic.
  2. In a large skillet, melt butter over medium heat and add the chicken, seasoning it with salt and pepper. Cook until browned on all sides.
  3. Add garlic and mushrooms, stirring until the mushrooms are tender and golden.
  4. Add orzo to the pan and toast it lightly for one minute.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the orzo absorbs the broth and becomes al dente.
  6. Stir in lemon juice and fresh herbs during the final minute of cooking.
  7. Serve in bowls topped with extra herbs and grated Parmesan.

Notes

For added richness, stir in a splash of cream at the end. Feel free to add your favorite veggies, like spinach, for a nutritional boost.
