- 5 ripe peaches, peeled and sliced
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar, divided
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Prepare the Peaches: Wash the peaches, peel, slice, and toss with 1 tablespoon of sugar and lemon juice. Let macerate for 30 minutes.
- Blend the Base: In a bowl, whisk together heavy cream, whole milk, remaining sugar, and vanilla extract until sugar dissolves.
- Combine the Mixtures: Gently fold macerated peaches into the cream mixture, reserving some slices for later if desired.
- Chill the Mixture: Cover and refrigerate for at least 2 hours until well chilled.
- Churn: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (approximately 20-25 minutes).
- Freeze: Transfer to an airtight container, fold in reserved peach slices, and freeze for several hours until firm.
- Serve: Let sit at room temperature for a few minutes before scooping. Enjoy in bowls or cones.
