- 1 ½ cups graham cracker crumbs (or crushed vanilla wafers)
- ½ cup melted butter
- 2 tablespoons granulated sugar
- 16 oz cream cheese (softened)
- 1 cup peanut butter (smooth or crunchy)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- Whipped cream (optional)
- Chopped peanuts (optional)
- Chocolate sauce (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well mixed. Press into the bottom of a 9-inch springform pan and bake for 8 minutes, then allow it to cool.
- In a large mixing bowl, beat softened cream cheese until smooth and creamy. Add peanut butter and mix until well combined. Gradually add powdered sugar, adjusting to taste. Stir in the vanilla extract.
- One at a time, beat in eggs until just incorporated. Avoid overmixing.
- Pour the filling into the cooled crust and bake for 50-60 minutes, until the center is set but still slightly jiggly.
- Once baked, turn off the oven and let the cheesecake cool inside for an hour, then transfer to the fridge for at least 4 hours or overnight.
- Before serving, top with whipped cream, chopped peanuts, and a drizzle of chocolate sauce if desired.
Notes
Use room-temperature ingredients for a smooth batter. Avoid opening the oven while baking.
