A nostalgic recipe for creamy and chewy Peanut Butter Lunch Lady Bars topped with chocolate.

- 1 cup creamy or crunchy peanut butter
- ½ cup unsalted butter, melted
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 2 cups oats
- 1 teaspoon baking powder
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
- In a large mixing bowl, combine melted butter, peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix until creamy and smooth.
- In a separate bowl, whisk together flour, oats, and baking powder. Gradually mix the dry ingredients into the wet mixture.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 20 to 25 minutes until edges are golden and a toothpick comes out clean.
- While baking, melt chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- After baking, let bars cool for 10 minutes, then pour melted chocolate over the top.
- Cool completely, then slice into squares. Chill in the fridge for 1 hour before serving.
Notes
For vegan bars, use coconut oil and a flaxseed substitute for the egg. Use gluten-free flour for a gluten-free version.
