Description

A nostalgic recipe for creamy and chewy Peanut Butter Lunch Lady Bars topped with chocolate.


Ingredients

  • 1 cup creamy or crunchy peanut butter
  • ½ cup unsalted butter, melted
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 cups oats
  • 1 teaspoon baking powder
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine melted butter, peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix until creamy and smooth.
  3. In a separate bowl, whisk together flour, oats, and baking powder. Gradually mix the dry ingredients into the wet mixture.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 20 to 25 minutes until edges are golden and a toothpick comes out clean.
  6. While baking, melt chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  7. After baking, let bars cool for 10 minutes, then pour melted chocolate over the top.
  8. Cool completely, then slice into squares. Chill in the fridge for 1 hour before serving.

Notes

For vegan bars, use coconut oil and a flaxseed substitute for the egg. Use gluten-free flour for a gluten-free version.
