Description

Delicious and nutritious pancakes made with peanut butter, protein powder, and ripe bananas, perfect for a wholesome breakfast.


Ingredients

  • 1/2 cup creamy or crunchy peanut butter
  • 2 large eggs
  • 1/2 cup protein powder
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk (regular, almond, or oat)
  • Optional mix-ins: chocolate chips, chopped nuts, or berries

Instructions

  1. In a bowl, mix the ripe banana until smooth, then whisk in the peanut butter and eggs until fully blended.
  2. In a separate bowl, combine the protein powder, flour, baking powder, and salt. Gradually incorporate this dry mix into the wet mix until you get a thick batter.
  3. If the batter feels too thick, add a splash of milk to achieve the desired consistency.
  4. Preheat a nonstick skillet over medium heat and lightly grease it with cooking spray or butter.
  5. Spoon a ladleful of batter into the pan. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  6. Stack the pancakes and drizzle with maple syrup, adding yogurt, berries, or powdered sugar if desired.
