A refreshing salad featuring mixed greens, ripe pears, creamy blue cheese, and a sweet shallot vinaigrette.

- Mixed greens (baby spinach, arugula, or spring mix)
- 2 ripe pears (Bartlett or Anjou)
- 4 oz blue cheese (Gorgonzola or Roquefort)
- 1 shallot (finely chopped)
- 3 tbsp extra virgin olive oil
- 2 tbsp champagne or apple cider vinegar
- 1 tsp honey
- 1/4 cup walnuts or pecans (optional)
Instructions
- Wash and dry the mixed greens.
- Slice pears into thin wedges, about ¼ inch thick.
- Crumble blue cheese and set aside.
- In a skillet, warm olive oil over medium heat.
- Add shallots and cook for 2-3 minutes until soft and fragrant.
- Pour in vinegar and simmer for 1 minute, then remove from heat.
- Whisk in honey and remaining olive oil until emulsified; season with salt and pepper.
- In a bowl, combine mixed greens, pear slices, and blue cheese.
- Drizzle shallot vinaigrette over the salad, tossing gently to coat.
- If using, sprinkle toasted nuts over the top before serving.
- Serve on a platter or individual plates.
Notes
Use fresh, ripe pears for the best flavor. Adjust the dressing to taste, starting with a small amount.
