Description

A refreshing salad featuring mixed greens, ripe pears, creamy blue cheese, and a sweet shallot vinaigrette.


Ingredients

  • Mixed greens (baby spinach, arugula, or spring mix)
  • 2 ripe pears (Bartlett or Anjou)
  • 4 oz blue cheese (Gorgonzola or Roquefort)
  • 1 shallot (finely chopped)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp champagne or apple cider vinegar
  • 1 tsp honey
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Wash and dry the mixed greens.
  2. Slice pears into thin wedges, about ¼ inch thick.
  3. Crumble blue cheese and set aside.
  4. In a skillet, warm olive oil over medium heat.
  5. Add shallots and cook for 2-3 minutes until soft and fragrant.
  6. Pour in vinegar and simmer for 1 minute, then remove from heat.
  7. Whisk in honey and remaining olive oil until emulsified; season with salt and pepper.
  8. In a bowl, combine mixed greens, pear slices, and blue cheese.
  9. Drizzle shallot vinaigrette over the salad, tossing gently to coat.
  10. If using, sprinkle toasted nuts over the top before serving.
  11. Serve on a platter or individual plates.

Notes

Use fresh, ripe pears for the best flavor. Adjust the dressing to taste, starting with a small amount.
