- 1 lb Beef Flank Steak (or sirloin/ribeye)
- 2 Bell Peppers (red, green, yellow)
- 1 Onion (yellow or sweet)
- 4 cloves Garlic (minced)
- 1/4 cup Soy Sauce (low-sodium recommended)
- 1 cup Beef Broth
- 2 tbsp Cornstarch (or arrowroot for gluten-free)
Instructions
- Slice the beef into strips and chop the bell peppers and onions.
- In a skillet over medium-high heat, sear the beef strips for 2-3 minutes until lightly browned.
- Add the seared beef, bell peppers, onions, minced garlic, soy sauce, and beef broth to the crock pot. Stir gently to combine.
- Cover and cook on low for 6-8 hours, or on high for 4 hours.
- About 30 minutes before serving, mix cornstarch with a little water to create a slurry. Stir this into the crock pot to thicken the sauce.
- Once thickened, serve over rice or noodles and garnish with chopped green onions.
Notes
Searing the beef before slow cooking helps lock in moisture. Avoid overcrowding the pot for even cooking.
