- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, blend the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually incorporate these dry ingredients into the wet mixture.
- Fold in the semi-sweet chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, until the edges are golden and the centers are soft.
- Cool the cookies on a wire rack, then melt additional chocolate.
- Dip the cooled cookies halfway into the melted chocolate and sprinkle with crushed peppermint before it sets.
- Allow everything to cool completely before enjoying.
Notes
For a dairy-free option, substitute margarine for butter. To make a vegan version, replace eggs with flax eggs.
