Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup crushed peppermint candies or candy canes
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cream together the unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this to the wet mixture.
- Fold in the crushed peppermint candies until evenly distributed.
- Form small balls (about 1 inch) and place them on the baking sheet, spacing apart.
- Sprinkle additional crushed peppermint on top of each biscuit.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For an alternative flavor, try adding almond extract or orange zest.
