Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup crushed peppermint candies or candy canes
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cream together the unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this to the wet mixture.
  5. Fold in the crushed peppermint candies until evenly distributed.
  6. Form small balls (about 1 inch) and place them on the baking sheet, spacing apart.
  7. Sprinkle additional crushed peppermint on top of each biscuit.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
