Ingredients

- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking soda
- ½ tsp salt
- 1 cup semi-sweet chocolate chips
- 1 tsp peppermint extract
- Crushed peppermint candies (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate mixing bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in peppermint extract.
- Gradually incorporate the dry mixture into the wet mixture, stirring until just combined.
- Fold in chocolate chips and crushed peppermint candies, if using.
- Using a cookie scoop, drop rounded balls of dough onto the baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes, until the edges are set but the centers are still soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Enjoy them warm!
Notes
For a festive touch, drizzle with melted chocolate and sprinkle with crushed peppermint.
