Instructions

- In a clean, dry bowl, whisk egg whites on medium speed until foamy.
- Add cream of tartar to stabilize, then gradually incorporate sugar while whisking.
- Once stiff peaks form, gently fold in peppermint extract and food coloring.
- Using a piping bag or spoon, dollop or pipe meringue onto the prepared baking sheet.
- Bake for 1.5 to 2 hours until meringues are crisp and lift off parchment easily.
- Turn off the oven and let meringues cool inside before serving.
