Instructions
- Prepare the dough: In a bowl, whisk together the flour, ginger, cinnamon, cloves, and baking soda. In another bowl, beat the butter and sugars until creamy, then add the molasses and egg. Gradually mix in the dry ingredients until combined.
- Chill the dough: Wrap the dough in plastic and refrigerate for at least 60 minutes or overnight.
- Roll and cut the cookies: Preheat your oven to 350°F (175°C). Roll out the dough to about 1/4 inch thickness and cut into shapes.
- Bake: Place cookie shapes on parchment-lined baking sheets and bake for 8-10 minutes. Cool completely on a wire rack.
- Make the filling: Beat the cream cheese and powdered sugar until smooth. Optionally add vanilla or orange zest.
- Assemble: Pair cooled cookies, spread filling on one, and sandwich with another.
- Decorate: Add sprinkles or leave plain as desired.
