Description

Deliciously spiced gingerbread cookies filled with a creamy filling, perfect for the holidays or cozy evenings.


Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp nutmeg
  • ½ tsp salt
  • ¾ cup unsalted butter, room temperature
  • 1 cup brown sugar, packed
  • 1 large egg
  • ¾ cup molasses
  • 1 tsp vanilla extract
  • 1 cup cream cheese, softened
  • 1 ½ cups powdered sugar

Instructions

  1. In a large bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt until fully combined.
  2. In another bowl, beat together the butter and brown sugar until creamy and light.
  3. Gradually add in the molasses, egg, and vanilla extract, mixing well.
  4. Slowly mix the dry ingredients into the wet ingredients in batches until fully blended.
  5. Wrap the dough in plastic wrap and chill it for at least an hour.
  6. Preheat your oven to 350°F (175°C). Roll out the chilled dough to about ¼ inch thick and use cookie cutters to cut into shapes.
  7. Place the cutouts on a parchment-lined baking sheet and bake for 8-10 minutes.
  8. Let them cool slightly before transferring to a wire rack to cool fully.
  9. To prepare the filling, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spread or pipe the filling between two cookies and enjoy!

Notes

Chill the dough adequately to prevent spreading. Use whole wheat flour for a nutty flavor or maple syrup instead of molasses for a different sweetness.
