Deliciously spiced gingerbread cookies filled with a creamy filling, perfect for the holidays or cozy evenings.
Ingredients

- 2 ¾ cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ¼ tsp nutmeg
- ½ tsp salt
- ¾ cup unsalted butter, room temperature
- 1 cup brown sugar, packed
- 1 large egg
- ¾ cup molasses
- 1 tsp vanilla extract
- 1 cup cream cheese, softened
- 1 ½ cups powdered sugar
Instructions
- In a large bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt until fully combined.
- In another bowl, beat together the butter and brown sugar until creamy and light.
- Gradually add in the molasses, egg, and vanilla extract, mixing well.
- Slowly mix the dry ingredients into the wet ingredients in batches until fully blended.
- Wrap the dough in plastic wrap and chill it for at least an hour.
- Preheat your oven to 350°F (175°C). Roll out the chilled dough to about ¼ inch thick and use cookie cutters to cut into shapes.
- Place the cutouts on a parchment-lined baking sheet and bake for 8-10 minutes.
- Let them cool slightly before transferring to a wire rack to cool fully.
- To prepare the filling, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread or pipe the filling between two cookies and enjoy!
Notes
Chill the dough adequately to prevent spreading. Use whole wheat flour for a nutty flavor or maple syrup instead of molasses for a different sweetness.
