- 1 cup freshly squeezed pomegranate juice
- 2 tablespoons sumac
- 3 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 onion, sliced (yellow or red)
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, whisk together olive oil, pomegranate juice, minced garlic, sumac, salt, and pepper.
- Place the chicken pieces in a large bowl and pour the marinade over them, ensuring each piece is well-coated. Marinate for at least 30 minutes, or longer if possible.
- Arrange the chicken skin-side up in a baking dish, scatter sliced onions around, and drizzle any remaining marinade over the top.
- Roast in the preheated oven for about 45 minutes or until golden brown with an internal temperature of 165°F (75°C).
- In the last few minutes, sprinkle fresh pomegranate arils over the chicken.
- Let the chicken rest for 5-10 minutes before serving, garnished with fresh herbs.
