Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup protein powder
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 2 teaspoons spices (cinnamon, nutmeg, etc.)
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup oil or melted coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large mixing bowl, whisk together flour, protein powder, sugar, baking powder, spices, and salt.
  3. In another bowl, mix pumpkin puree, eggs, milk, and oil until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Fill each muffin cup about three-quarters full.
  6. Bake for 18-22 minutes, or until a toothpick comes out clean.
